Nuar bu iş için en uygun kısımdır zaten Felemenkçe bil=kalça, tong=şerit manasına geliyor. Elma sirkesinde terbiye edilen etler daha sonra kaya tuzu,kişniş,kara biber,kahverengi şeker ile ovulup kurutulmak üzere asılır. Güney Afrika'nın iç bölgelerinde soğuk ve kurak geçen kış geceleri en ideal kurutma zamanıdır. Genelde içinin yumuşak olması için güneşte kurutulmaz.
